My favorite cheese these days is a sheep's milk soft cheese made by Sally Jackson. She's based in Washington State (Okanagon Highlands), and rumor has it she borrows milk from her neighbor's farm to make three different cheeses (sheep, goat, cow). She adds a somewhat unusual last step to the production process, and wraps the finished product in chesnut leaves prior to aging. Cowgirl Creamery will either ship you this cheese, or let you taste it/buy it live at San Francisco's Ferry Building.
